Best BBQ Paleo Pulled Pork

Pulled pork is one of the easiest entrées to prepare due to it's mild base yet scrumptious flavorful fat content, and it is almost never the wrong decision unless you are attending a vegan pot-luck in Paris, which I am sure exists and I'd enjoy attending, but this is not that. (Though, this recipe may work well with jack-fruit; I haven't tried it yet, but I just may.) This is a carnivore's delight and is only better when starting with smoked meat. A combination of savory sweet zing that all BBQ needs in the right order, this pulled pork does not disappoint on its own, in a bun, wrapped in a burrito, nestled in a taco sling, or atop robust deep greens. Have it your way without standing in the heat or slaving for hours for the perfect tender bite. Also, save time by mixing up the recommended spices to have on hand for future quick meals. There, I just described all the reasons why you should put this on your menu this week, but just in case you are still in question I'll put it in two words - Savory. Easy. Need I say more?

Best BBQ Paleo Pulled Pork

Yield: 8-12 Serving

Ingredients:

  • 4lb Pork shoulder (or Boston butt)

  • 1 c. Chicken or Pork Bone Broth (regular broth works too)

  • 1 T. Salt

  • 1 T. Pepper

  • 1 T. Garlic Powder

  • 1 T. Onion Powder

  • 1 T. Chili Powder (I like ancho.)

  • 1 T. Smoked Paprika

  • 1 T. Organic Apple Cider Vinegar

  • 1-2 T. Molasses

  • 1/4 c. Coconut Sugar or Chopped Pitted Dates

  • 1/4 c. Coconut Aminos

  • 1-2 T. Louisiana Hot Sauce and/ or 1/4 c. Pepperoncinis (optional)

Instructions:

  1. Place all of the seasonings in a small bowl and mix well to make the spice rub.
  2. Massage the spice rub into the meat. Simply sprinkle leftover spices over the roast.
  3. If there is time, wrap and refrigerate the meat for 3 hours (up to 24 hours) to set the rub and let it permeate the meat. While this is not required, it does allow for the most flavorful end. (If time is not your friend, simply season and throw in other ingredients to start cooking.)
  4. Place spice rubbed pork + remaining ingredients into the slow cooker.
  5. Cook on low for 8-10 hours.
  6. When done, remove the pork and place it on a cutting board. Let set for at least 5-7 minutes so the juices are not all expelled when cutting or shredding.
  7. Shred with two forks or...My favorite way to shred meat is to let my husband do it ;) or to put it in my stand mixer in portions with the dough utensil and let it do the work for me.
  8. To serve, place back into the crock pot with juice, or place in a serving dish, and pour juices over the meat before serving.

Serving suggestions: This recipe can stand alone, as we have done here, but I also like to serve it as pulled pork sandwiches, in bbq tacos or quesadillas, or over a deep green salad with homemade paleo ranch.
